★Spice chiffon★

★Ingredients(17 cm across of a chiffon mold)★
kind of powder
{cake flour…70g
baking powder…3/4 teaspoons of it}
spices
{cinnamon powder…1 and 1/2 teaspoons of it
ginger powder…1/4 teaspoons of it
anise seeds…1/2 teaspoons of them}
the yolk…3
granulated sugar…30g
salad oil…2 tablespoons of it
water…4 tablespoons of it
meringue
{the albumen…4
granulated sugar…40g}

★Preliminary★
①Mix kind of powder, cinnamon powder and ginger powder, then put through a sieve twice.
②Begin to heat an oven to 170℃.

★Make a dough★
①Mix the yolk and granulated sugar until becoming soft, then add salad oil and water them and mix. Put anise seeds into them and make a dough of base.
②Beat the albumen until they form into stiff peaks and make meringue.
③Mix meringue and kind of powder to the dough of base.

★Bake★
①Pour the dough into a mold and run a bamboo skewer or a chopstick through the dough, then turn them so that the surface of them become flat and bake them in an oven heated to 170℃ for from 35 to 40 minutes.
②Let them cool and remove them from the mold.
